Class Notes

  • CL255A must be in every email subject line.
  • This class will be very difficult with lots of assignments which will require skills in math and Microsoft Excel.
  • A scientific calculator will be required for completing many assignments and the final.
  • This class is about front of the house management, not about food. Back of the house (kitchen) management is taught in the 'management by menu' class.
  • The class project is worth 25% of the total grade.
  • There will be a notebook due. This may be submitted in either a bound or electronic version.
  • Computers are encouraged to take notes in class.
  • Assignments may be re-submitted up to a week late for more points, but they must be submitted on-time first.
  • You will use the notes you take on the wine presentations to create your wine list for the final project
  • Week 5 field trip to Sound Spirits. We will meet before class, then head out. The midterm will be taken upon returning to the school.
  • Wine Presentation: Burgundy, France-James LaBombard, Samantha Pierce, and Stephanie Hurt will be my teammates.
  • Mission Statement:
           -Values
           -Mission statement should not be violated easily
           -Speaks to different audiences (staff, customers, suppliers, investors, press)
           -About 1/2 page long.
           -Begin with a statement, then elaborate on it, "in view of that mission..."
           -Due before class next Monday in the drop box
